You can bridge the Airport Extreme and Time Capsule together. That will give you five Gig-E output ports. You only need one of them running Wifi though - otherwise they will compete with one another.
Plug the Mini Server and NAS into one of those two. Obviously the Mini Server is the central repository. Use Home Sharing to send the files to your laptops. I guess the iPod Touch goes through the laptop for configuration. If you can wire in the AppleTV (although it is only 100Base-T), you should since you are carrying 320GB. Otherwise Wifi transfers will be a little slow.
As for all the external hard drives. You might as well hang them all off the Mac Mini (assuming they are USB). It can serve them out just as well/better than the Time Capsule or AEBS.
Not that I don't have a lot of hard drives lying about, but it seems like you might have overkill there.
As for MobileMe, if rumors are to be believed, wait a month or so and that world is going to change.

The server has a 2TB Time Machine drive and a 1TB iTunes drive which is basically a 24/7 duplicate of my main computer's iTunes library. My main computer has a 640GB main drive and a 1TB media drive for my iTunes Library. I've got a couple AppleTV's (250GB and 40GB), iPhones (original and 4G), some iPods and now an iPad2.

Anyone have any luck getting the $18.00 fee waived when they upgraded their iPhone? If so what tactic did you use....Just ask, tell them they did it for a friend etc....

I've done basic PHP dev on dialup when necessary...it's not a dream but it's functional. Image heavy sites or anything with flash or video content would have been a problem, though.

What application do you use to render those frames? Is that application multi-core and multi-thread compatible?
I use Lightwave 9.6 and perhaps Lightwave 10 in the near future. I use Digital Performer 7 and allot of virtual instruments with high processing effects. I am also getting Final Cut X when it comes out in June. It's hard to know with cinibench what they are using to get the speed performance they are getting. I also heard a guy from Newtek tell me that the xx55 computers are much faster with radiosity in the 3D then the xx53 and xx54s from 2008 and 2009. I'm just so confused but so in need of a fast computer for my business.

Depends if it's a server side dependancy, that you be running a version after a specific build (which could be after PPC support was removed).

MacBook fans are designed to be on all the time your Mac is on, at a minimum speed of about 2000rpm. They spin faster, as needed, to keep your Mac at a safe temperature when your CPU/GPU are under heavy workloads. Check Activity Monitor to see what apps/widgets/processes are consuming system resources.

I doubt there would be a huge difference, but if you are looking for numbers, the high end 15" MBP has the 6750M in it and there are lots of benchmark numbers for it floating around the 'net. That should give you at least a baseline of what to expect from the 6750m and if that is "good enough" for you, then I would roll with that.
Just my .02 worth.
P.S. Yes I realize that they utilize different processors, and other factors can cause the benchmark numbers to vary, but it is a good baseline for what to expect in the iMac.

To improve the Mac Mini's sound I recommend the iMic USB Sound Card. It is well built. I bought mine 5 years ago and it is still going strong.
